Rescuing Stale Beans: An 11.5-Hour Yunnova Gesha Cold Brew Recipe

I've been brewing coffee on my V60 for a week. But today, I did something different. I ran a rescue mission on a 2-week-old Yunnova Gesha. After two weeks of opening and closing the bag, my Yunnova Gesha was starting to lose its magic in the pour-over. Instead of letting a premium bean go to waste, I decided to see if cold water could save it.
The Setup: The Cold Brew Kit
-Electric burr grinder
-Plastic Hario V60
-V60 paper filters
-Glass carafe/Cup
-A simple glass/plastic container with a lid for steeping
It's a minimalist setup, but it proves a point that cold brew doesn't require an expensive system to taste good.
The Bean: Yunnova's Gesha (Reserve Filter)
-Roast: Light (Agtron 85)
-Process: Washed
-Flavour Notes: Floral, Tangerine, Buddha's Hand
-Retail Price: $36
-Weight Per Bag: 125g
The Brew:
-Grind: Coarse (like raw sugar)
-Dose: 30g
-Water: 240ml cold, filtered water (1:8 ratio)
Method: Stirred gently for 15 seconds to saturate the grounds, then sealed and left in the fridge for 11.5 hours.
What I tasted: After letting it steep, I strained the mixture through my V60 paper filter. It took patience, watching it drip at about 3 drops per second, but the result was a stunning, crystal-clear amber concentrate.
The first sip was surprisingly smooth. All the harsh, stale edges that were creeping into the hot brew were completely gone. The acidity was still bright, but it was a mellow, round brightness. Additionally, the delicate floral notes and that distinct Buddha's Hand sweetness were still there. It wasn't as explosive as it would have been on day one, but it was elegant, tea-like, and incredibly refreshing over ice.
This experiment proved something important: Cold brew is the ultimate safety net for light roasts. It extracts the sweetness and body while leaving behind the bitterness and the "flat" flavors that oxygen brings to old beans.
Yunnova's Gesha is a brilliant bean for hot pour-overs, but it just proved to me that it has a second life in the fridge.
